Bacon Pancake Dippers
These quick and easy pancake dippers are so fun and yummy. We love the ease of eating them and the delicious mix of sweet and salty-savory. All you need is a skillet, pancake mix, and bacon. Start by cooking your bacon in whichever method works best for you. We like to use our microwave and use one of these. Prepare pancake mix according to package directions and pre-heat skillet. I love to use my electric skillet when we make pancakes, for the ease of flipping. Start by placing bacon on the skillet and then scooping batter over the top. {scoop just enough to cover bacon} Let those cook for 3-5…

Clark Crew BBQ
National Championship BBQ, up-scale atmoshphere, friendly staff, and amazing chef. Thats what you will find at OKC’s newest BBQ joint, Clark Crew BBQ. {Located off I-44 and NW Expressway.} Chef Travis is one friendly guy with amazing smoking skills. This man has won 7 Jack Daniels World Championships with 5 in a row! He even has his own exclusive Single Barrel Jack Daniels Whiskey. I love the way he came up with his name. They were travelling up to Kansas City for a charity race for family and they stumbled upon a BBQ competition. They went to explore and taste and Travis decided that he wanted to learn and conquer. …

The Big Texan
So we went to Palo Duro Canyon for our last camping trip of the season, so of course we had to make a trip to The Big Texan for dinner! This is one of our favorite traditions when we pass through Amarillo, TX. Such a beautiful place, especially during the Holiday Season! Its all lit up with Christmas lights and decor everywhere. Even the giant steer skull gets in on the action! The atmosphere is big, welcoming, and very rustic. Walking up into the restaurant you walk along a huge wrap around porch to the front, on some beautiful old wood planks, really bringing the western vibe the moment you…

Palo Duro Canyon
The “Little Grand Canyon of Texas“! This is such a special place for my little family. We have been almost every year for the last 5 years. Its such a wonderful place to visit for the day, but even better if you can stay for the week. So much hiking available! Palo is located in the Texas panhandle; 14 miles from Canyon, TX and 25 miles South of Amarillo, TX. Descend 800 feet into the canyon and drive the 16 miles of paved roads to enjoy the canyon and all it has to offer. Enjoy the hiking trails, historic sites, biking trails and horseback riding. Our trip this year was…
