Gluten Free Christmas Tree Cakes
Is it even Christmas if you aren’t eating a Little Debbie Christmas Tree Cakes?
For our family, that would be a hard no, except this year we all went gluten free. This definitely put a damper on my Holiday Spirit! I decided that making gluten free Chrismas tree cakes would be my next project to tackle.
I scoured the web for an easy and delicious white cake recipe and stumbled upon this one from Sugar Spun Run.
To begin, with any cake recipe that you convert to gluten free; texture changes. Consitstency is different. I followed her recipe with my only changes being the flour. My cake batter was very sticky. I am thinking that maybe I needed more flour. I will defintely be playing with this the next time I make these. These were very sweet cakes. Make sure to get a very thin layer of the chocolate over the whole cake, otherwise its too much sweetness.
Making the Cake Batter
We will first use a mixer that will beat the butter until its creamy. Next add in sugar and oil. After scraping sides, add in vanilla extract.
In a separate bowl, whisk flour, baking powder, and salt together.
Slowly alternate between adding flour mixture and milk to the butter mixture, combining well each time and ending with the flour.
Combine egg whites in a bowl and using a hand mixer or the stand mixer on high beating untill stiff peaks form.
Now we will use a spatula and fold in the egg whites into our batter.
Pouring the mix into the baking pan (lined with parchment paper for easy cleanup!!) and leveling it. Again, here is where my sticky batter became an issue. I could not get it to spread evenly.
Bake at 350F for approx 15 minutes. Toothpick comes out clean, no crumbs and not wet!
Remove and let cool for 15 mintues. Transfer by the parchment paper to cooling racks to cool completely.
Assembling the Cakes
Now to assemble our gluten free Christmas tree cakes!
Using a tree cookie cutter, cut out even number of trees. Using a frosting of your choice; we will sandwich two trees together. Homemade or a tub of your favorite frosting will work! {Sugar Spun}
In a microwave safe bowl, melt your white chocolate and pour over your assembled cakes. (make sure to place parchment or foil under your racks to again make cleanup a lot easier!)
Using a spoon or spatula to evenly spread the melted chocolate over the sides. (make it a thin layer!)
Next you will melt your red chocolate to drizzle over the trees as garland, and top with green sanding sugar, sugar sprinkles, or any sprinkles that you may want!
Let cool and harden, being careful to not let the chocolate stick to the rack.

Gluten Free Christmas Tree Cakes
Ingredients
- 6 Tbsp unsalted butter, softened
- 2/3 Cup Vegetable Oil
- 1 Tbsp Clear Vanilla Extract
- 2 2/3 Cup +2 Tbsp Gluten Free Flour
- 1 Tbsp Baking Powder
- 2 Cup Sugar
- 1 tsp Salt
- 1 Cup Milk, at room temp
- 6 Large Egg Whites, at room temp
- Vanilla Frosting
Instructions
- Oven pre-heated to 350F. Prep jellyroll pan with parchment paper.
- Using mixer, beat butter until creamy.
- Add sugar & oil until combined.
- Next add in vanilla extract.
- In separate bowl, whisk together flour, baking powder, and salt.
- Alternating between the flour mixture/milk, add to your buttermixture ending with the flour. Combining completely before addingmore.
- Combine egg whites in a separate bowl, mixing on high until stiffpeaks form.
- Fold in egg whites into batter gently.
- Pour batter into jellyroll pan; spreading evenly.
- Bake at 350F for approx 15 mins. Toothpick should come out clean.
- Cool for 15 mins. Transfer to cooling rack to cool completely.
- Cut out even number of trees.
- Sandwich with frosting.
- Pour melted white chocolate over trees on wire rack.
- Drizzle red melted chocolate and top with green sugar sprinkles
- Let cool and harden.

How much sugar is required in the cake batter? I’m not seeing a measurement for it but just that it’s added in the instructions.
