The Best Gluten Free Chocolate Chip Cookies

What better way to show your special someone that you love them then with homemade cookies?!  This recipe has been the best gluten free chocolate chip cookies we have ever made!  

I ran across this recipe from Host The Toast and decided to use it as my basis for our cookies.  Though I really didnt change much, just a few little tweaks, as this was a great recipe already!

Probably one of my favorite things about this recipe is that you dont have to wait for the butter to naturally soften at room temperature.  Just pop that 6oz of butter into the microwave and melt!  And while we are talking about butter; I highly suggest using Kerrygold Butter!  It really makes these cookies taste divine and its found at most grocery stores!

So let cool and then add to bowl with sugars and mix.  Slowly add in eggs and vanilla extract.  

In a seperate bowl mix together your flour, cornstarch, salt, and baking soda.  Then slowly mix into the wet ingredients until fully combined.

Now for the best part!  Add in your chocolate chips and in our case, we always add in Heath mix.  You could also add in walnuts or pecans if that suits your tastebuds!

After all ingredients are mixed thoughouly, you will need to refirgerate the dough for at least 30 minutes to get a good rise out of the cookies.  

Personally, I recommend spooning the dough out into portions now and then putting in the fridge for 30 mintues or putting into the freezer to store for portion controlled baking at a later date!

Once refrigerated for at least 30 minutes, bake in the oven at 350*F for 12-14 minutes. 

Y’all I highly, highly recommend using one of these silicone mats, as it gives the cookies a perfect crisp on the bottom side and of course they are no stick!  So Win!  

Let cool for at least 5 minutes and then devour those yummy cookies!  I love my cooling racks to help cool the cookies faster!

The Best Gluten-Free Chocolate Chip Cookies

Adventures In Mascara

Ingredients:

  • 2 C + 2 Tbsp Cup4Cup Flour
  • 1 tsp Baking Soda
  • 2 tsp Cornstarch
  • 1 tsp Salt
  • 1 1/2 sticks (6oz) butter, melted and cooled
  • 1 C Brown Sugar
  • 1/2 C Sugar
  • 2 Eggs
  • 2 tsp Vanilla Extract
  • 1/2 bag of choc chip cookies or more if you really want chocolatey
  • 1/2 bag of Heath mix

Directions:

  • Beat together butter and sugars until combined.
  • Then add in eggs and vanilla. 
  • In a seperate bowl mix together flour, baking soda, cornstarch, and salt.  
  • Slowly combine flour mix to wet ingredient mix.  
  • Add in chocolate chips and heath and any nuts you may wish to add.  
  • Spoon out cookie dough into portions.  Place in fridge for a minimum of 30 minutes.
  • Bake in oven at 350*F for 12-14 minutes.  
  • Cool for 5 minutes on pan and then switch over to cooling racks to finish cooling.
